GF DF French Fries

This is my son's favorite treat!

4 large russet potatoes
2 cups oil
salt

1. Cut potatoes in 1/4-inch thick sticks. Place in cold water to stop them from turning brown.

2. In a deep medium sized pot add oil and heat on medium-loq heat until hot (but not smoking- about 325 degrees F on the sugar thermometer). Using a heat proof slotted spoon lower fries into the hot oil and cook until soft (about 6 to 8 minutes).

3. Remove from oil using slotted spoon and place on paper towel. Continue with the rest of the potato sticks until they are all soft.

4. When ready to serve, turn heat up to high (350 degrees F) and lower french fries into oil until golden and puffy (about one minute). Serve hot with salt.
