
Much healthier then fried french fries and just as tasty. One can also substitute parsnip and sweet potatoes for some of the potatoes to make a delicious harmony of flavors.
6 medium potatoes
1 Tbspn olive oil
2 tsp dried parsley
1 tsp chili powder
1 tsp paprika
1/4 tsp garlic powder
1/2 tsp dried thyme
pinch dried rosemary
pinch dried basil
pinch cayenne
2 Tbsp olive oil
1. Preheat oven to 425F.
2. I prefer not to peel the potatoes but feel free to do so. Cut potatoes into wedges about the width of two fingers.
3. Pour oil on one plate or bowl. Mix spices together on another plate or bowl. Coat the wedges with oil and then roll in the spices.
4. Place on a very well greased baking sheet and bake for 30 to 45 minutes. Turning the pieces over two or three times.
