DF GF Fish Breaded with Potato Flakes


My family enjoys this recipe so much that eagerly eat the fish before I remember to take a photograph. So here is a picture of my last mouthful. Yum! This recipe comes from allrecipes.com.

Ingredients:
1 egg
2 tablespoons prepared yellow mustard (optional)
1/2 teaspoon salt
1 1/2 cups instant mashed potato flakes
1/4 cup oil for frying
4 (6 ounce) fillets sole/tilapia (or any other mild white fish fillet)

Stove Top Directions:
  1. In a shallow dish, whisk together the egg, mustard, and salt; set aside. Place the potato flakes in another shallow dish.
  2. Heat oil in a large heavy skillet over medium-high heat.
  3. Dip fish fillets in the egg mixture. On a plate, very generously sprinkle the potato flakes evenly over the fish, flip and do the other side too. For extra crispy crust, dip into the egg and do the potato flakes again.
  4. Fry fish fillets in oil for 3 to 4 minutes on each side, or until golden brown.
One can also add spices to the flakes before breading the fish. Some ideas are: garlic powder, oregano, parsley, and onion powder. But it is very tasty just as is.

Oven Directions:
The breaded fish can also be baked at 375F on a lightly greased cookie sheet, instead of frying it- which is a healthier and easier option (less risk of the flakes falling off the fish). But nothing beats frying for flavor!
