GF DF Meatballs with Sauce

Serve on rice or GF pasta or spaghetti squash.

Ingredients for Meatballs:
1 lb. ground beef
1/3 c. instant potato flakes
1/4 c. water
1 Tb. GF soy sauce
1 tsp dried parsley
3/4 tsp. salt
1/8 tsp. pepper
2 cloves garlic, minced OR 1/8 tsp. garlic powder
1 egg

Ingredients for Sauce:
1 (10 oz) can tomato paste
4 cans water
1 tablespoon brown sugar
2 tablespoons lemon juice
1/2 teaspoon salt
1 teaspoon dried parsley
1/2 teaspoon dried basil leaves
1/2 teaspoon dried sage
1/2 teaspoon dried thyme
1/4 teaspoon cayenne pepper

Meatball Directions:
1. Using your hands, or a large fork mix all the meatball ingredients in a large bowl.

2. Gently form balls about 1 1/2 inches in diameter. Place them in a greased baking dish.

3. Bake at 400 degrees about 15 minutes. Cut one of the meatballs to make sure there is no pink in the middle.

Sauce Directions:
1. Put all ingredients in pot and simmer for an hour.


Put meatballs on rice or GF pasta, place meatballs on top and pour sauce over the top.


Meatballs freeze well. Spread over tray and freeze before placing in zip-lock bag. Don't forget to label.
