
Ingredients
1 (15 ounce) can artichoke hearts, drained and chopped (marinated adds lovely flavor)3/4 cup mayonnaise
1 pinch garlic powder (or a clove or two of garlic minced)
1 jar (2 ounces) pimiento (optional)
4 skinless, boneless chicken breast halves
salt and pepper to taste
dash of paprika
Directions
1. Preheat oven to 375 degrees F (190 degrees C).2. Squeeze off the extra moisture from the drained and chopped artichokes. In a medium bowl, mix together the artichoke hearts, mayonnaise, pimientos and garlic.
3. Place chicken in a greased baking dish sprinkle salt and pepper over the chicken, and cover evenly with artichoke mixture. Sprinkle paprika over the top.
4. Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.
