
Mashed potatoes is very easy to make dairy free.
3 Large potatoes peeled and cubed
1 cup mayonnaise
3/4 tsp salt
1/4 tsp pepper
1. Put potatoes in pot and cover with water. Bring to a boil over medium-high heat and then reduce heat to maintain a rolling boil. Cook until potatoes fall apart when poked with a fork.
2. Mash with hand mixer. Add mayonnaise, salt and pepper and mix until incorporated. Serve hot.
It is easy to dress this dish up by adding fresh parsley, bacon bits or minced garlic after mashing the potatoes or adding whole cloves of garlic to the potatoes while they are boiling and mash them along with the potatoes.
I have never tried making mashed potatoes with Mayonnaise. I always just make them using regular almond milk and butter. I'll have to try the mayo next time. Thanks! :o)
