DF Baked Garlicy Potatoes


A favorite recipe from a friend who is fortunate enough to be married to a chef. She uses butter rather then the oil at the end.

Ingredients:
3 pounds of potatoes cut into 3/4" to 1" chunks
1/4 cup olive oil
salt
pepper
butter substitute/olive oil
finely minced garlic

Directions:
1. Preheat oven to 400F. Roll the potato chunks in oil and then sprinkle with salt and pepper.
2. Bake on a cookie sheet for 45 minutes to an hour, flipping them twice, so that they start to go golden brown and crisp all over
3. Take out of the oven, toss them with a little olive oil and coat with garlic and serve while hot.
